I took lessons at 2 schools I recommend if you plan to be in Chiang Mai:

1) Chiang Mai Thai Cookery - This is a very famous and old school.

2) A Lot of Thai cooking school - These cooking classes are taught at a house, so it is more casual although still professional. Their cookbook is beautiful.

Both schools organize their classes as different menus over several days so you could plan to cook for 3-4 days and be a pro by the time you come home!
